The Switch Online Service is still in its early days and there’ll be aspects of it that come to light as the days and weeks go on, but thanks to a statement provided to IGN we at least know an earlier concern isn’t quite as bad. Before it was understood and stated that if your subscription ended, your cloud saves would no longer be accessible, seemingly for good. The freshly provided information reads:

“If a Nintendo Switch Online membership expires, users won’t be able to access their Save Data Cloud backups. However, Nintendo will allow users who resubscribe within 180 days to access their previous Save Data Cloud backups.”

So while they’ll remain out of reach for non-members, Nintendo has clarified that for 180 days after your subscription’s end you can reclaim these saves by renewing. It’s still not an ideal set up, but it does remove a certain level of pressure when it comes to managing the timing of renewals.
